These lacy, latkes are made during Hanukkah. Hanukkah or the Feast of Dedication is a Jewish festival. The Hebrew word Hanukkah means dedication. The Hanukkah holiday lasts eight days. It commemorates the re-dedication of the holy Temple in Jerusalem. At this time we can re-dedicate our lives to God!

Spring onions chopped 3 tablespoons
Lemon juice 1 tablespoon
Salt to taste
Matzo meal 2 tablespoons
Grated onion 2 tablespoons
Black pepper 1/2 teaspoons
Potatoes, Shredded 2 1/2 pounds
oil for frying
Applesauce and sour cream
- Mix lightly beaten egg, spring onions, salt and pepper, onion, matzo meal and lemon juice.in a bowl.
- Squeeze out the liquid from the shredded potatoes and stir it into the egg mixture.
- Heat oil in a pan and spoon the mixture and drop them in the hot oil and flatten the latkes.
- Fry the latkes until golden brown on both sides. Serve with applesauce and sour cream.
