Green Zucchini Rice


Saint Patrick's Day is celebrated on 17 March. It is an annual feast day that celebrates Saint Patrick who is  recognized as the patron saint of Ireland.Originally, the colour associated with Saint Patrick was blue.  He is said to have used the shamrock,  to explain the Holy Trinity and now the color green is associated with St Patricks day.
Here's the recipe for green zucchini rice. Zucchini is a summer squash. In a culinary context, zucchini is treated as a vegetable. Botanically,the zucchini is an immature fruit, hmmmm interesting huh???


Basmati Rice - 1 Cup
Water - 2 Cups
Zucchini (Shredded) 1 cup
Oil - 2 tablespoons
Curry leaves - 1 Strip
Cumin seeds - 1/2 teaspoon
Mustard seeds - 1/2 teaspoon
 Dry red chillies (whole) - 4
 Bay leaves - 2
Salt 1/2 teaspoon 
Cinnamon stick - 1/2 inch

  • Heat oil in a pan over medium heat. 
  • Add cumin seeds and mustard seeds to the oil. Add curry leaves, dry chillies and bay leaves. Add basmati rice and stir-fry for about 2 minutes.
  • Add water, zucchini, salt and stir.
  • Pour the mixture into the rice cooker and serve when done.
